All the recipes below are perfectly portioned for 2 people
(if you don’t see the written instructions, refresh the page, I’m still filling them in 🙂

Brazilian cheese bread – I found it at costco but have also seen them at HEB!

Arugula and Pomegranate Salad with Maple Vinaigrette
1/2 bag of arugula
1/4C chopped apples (I used honey crisp apples but any crisp apples work)
2T pomegranates
2 sliced strawberries
2 strips of maple bacon (cook these ahead of time)
goat cheese to taste
pecans to taste

Maple Vinagrette Dressing
1T apple cider vinegar
1T balsamic vinegar
1t dijon mustard
1t maple syrup
pinch of salt
1/4C extra virgin olive oil

Creamiest Mashed Potato Ever
1 large russet potato
1/4C butter
1/2C heavy whipping cream

Roasted Lemon Garlic Mushrooms
1 small pack of baby bella mushrooms
1/2 medium garlic minced
1/4C low sodium soy sauce
1t Worcestershire sauce
1/4t parsley
1/4t lemon zest
2T butter
pepper to taste

Chocolate covered strawberries
1C semi sweet chocolate chips
1T extra virgin olive oil

Seared Ribeye
1 Ribeye steak
sea salt to taste
*Instructions – Take the steak out of the fridge and let it rest at room temperature for 20- 30 minutes (yes this will make a difference in the final result!). Preheat the oven to 400 degrees. Place your pan on the stove and let it heat up on medium high heat. Season steak generously with salt and pepper on both sides and massage. Once pan is hot add butter and as soon as the butter turns brown add the steak. Cook for 2 minutes without touching it. After 2 minutes, turn and cook for another 2 minutes. Then immediately transfer to the oven and let it finish cooking int he oven. The amount of time in the oven is going to depend on how you want your steak cooked (see the temperature chart below). We like our steak medium so I check it with a thermometer after 2 minutes and it’s usually pretty close to being done. If it hasnt’ quite reached the temperature that you like then put it back in the oven and check again after a minute. Let the steak rest for 5 minutes out of the oven before cutting it so it can finish cooking.

** If you don’t have a pan that is safe to use in the oven you can put a sheet pan in the oven while its preheating so it can get super hot. As soon as you’re done cooking the steak on the stove, take it out of the pot and place it directly on top of the sheet pan and follow the normal instructions listed above.

Rare – 120-125
Medium Rare – 125-135
Medium – 134-145
Medium Well – 145-155
Well Done 155-170
